Cream Cheese Filled Banana Bread

Happy soggy, foggy Monday! This is a great quick bread recipe that The Lazy Chicken Coop shared on facebook!

Makes 2 loaves.

Ingredients for Bread:
-1 cup sugar
-1/2 cup butter, softened/melted
-2 eggs
-3 ripe bananas
-1 tsp salt
-1 tsp baking soda
-3 tbsp sour cream
-2 cups flour
-1 cup chopped nuts, optional

Ingredients for Filling:
-8 ounces cream cheese, softened
-1/3 cup sugar
-1 egg
-1 tbsp flour

Topping:
-cinnamon for sprinkling
-sugar {I use raw coarse sugar}

Process for Bread:
1. Preheat oven to 350 degrees.
2. Break bananas into pieces in a mixing bowl.
3. Beat bananas until they are "smashed".
4. Add butter and eggs to bananas, mix well.
5. Add salt, baking soda and sour cream, mix well.
6.  Add flour {and nuts if using} and mix well.
7. Divide half of the bread mixture between two greased loaf pans {the original recipe said greased and floured pans; I tried just greasing them the second time I made this and found greasing was enough}.  Set other half of bread mixture aside.

Process for Filling:
1. Beat together cream cheese, sugar, flour and egg until smooth.
2. Divide the filling between the two loaf pans, pouring evenly over the first layer of bread mixture.
3. Top filling with the remaining bread mixture.
4. Sprinkle loaves with cinnamon and sugar {I use raw coarse sugar}.
5. Bake loaves for 1 hour to 1 hour 15 minutes.
6. Remove loaves from pans and place on a wire rack to cool completely.
7. Enjoy!

The second time I made this recipe I forgot to sprinkle the loaves with the cinnamon and sugar; my son liked it a lot more with the cinnamon and sugar.  It adds an extra crunch!
