This Caramel Apple Pie is FANTASTIC! The apples fill the pie and it doesn't sink to make a valley when finished.

You will need to come up with a crust for a double crusted pie for this recipe; you can buy a pre-made crust {I won't judge you I now what its like to be short on time!} but making your own really makes it so much better! I always use this one when making a double crusted pie...Foolproof Pie Dough.
Ingredients:
-1 recipe for a 9 inch double crust pie crust
-3/4 cup sugar
-3 tbsp cornstarch
-1/2 tsp ground cinnamon
-6 cups thinly sliced apples {you choose what kind}
-1/2 cup caramel ice cream topping
-1/4 cup chopped pecans (optional)
-whipped topping or ice cream for serving (optional)
Process:
1. Preheat oven to 400 degrees.
2. Stir together sugar, cornstarch and cinnamon.
3. Toss apples with sugar mixture to coat well.
4. Carefully, form one layer of the pie crust into a lightly greased pie dish.
5. Pour apple mixture into the unbaked crust.
6. Drizzle caramel topping over the apples, sprinkle with pecans (if using).
7. Place the second layer of the pie crust over the apples and finish the edges.
8. Cut slits in the top of crust to allow steam to escape.
9. Place pie dish on baking sheet (in case of spill overs).
10. Bake for 40-45 minutes, until golden brown.
11. Cool for at least 1 hour before slicing.
12. Serve with whipped topping or vanilla ice cream if desired.
13. Enjoy!
