Cut-out Cookies with Glossy Icing

These are the BEST cutout cookies!  The cookie reminds me of Spritz cookies and the frosting has a great glossy finish and also tastes great!

Ingredients for the Cookies {makes 40-60 cookies depending on the size of your cookie cutters}:
-1 1/2 cups butter softened
-2 cups sugar
-4 eggs
-1 tsp vanilla extract
-5 cups flour
-2 tsp baking powder
-1 tsp salt

Process:
1. Cream together butter and sugar until smooth.
2. Beat in eggs and vanilla.
3. Stir in flour, baking powder and salt.
4. Place dough in an airtight container, cover and refrigerate for at least 1 hour or overnight.
5. Preheat oven to 400 degrees.
6. Roll out dough on a floured surface; to 1/4 - 1/2 inch thick.
7. Cut into cookie shapes using whatever cookie cutters you like.
8. Place on a cookie sheet about 1 inch apart.  {I like to use parchment to be sure that they don't stick.}
9. Bake for 8-10 minutes or until "fluffy" and slightly golden.  Cool completely on a wire rack.
9. Ball up dough, re-roll, cut cookies and repeat until all dough has been used.
Another great benefit to using parchment is that you can take it off of the hot cookie sheet and add new dough without them beginning to "melt" from the heat of the pan!

Ingredients for the Frosting {frosts about 40-60 cookies depending on the size of the cookies}:
-4 cups powdered sugar
-2 tbsp plus 2 tsp milk
-2 tbsp plus 2 tsp light corn syrup
-1 tsp almond or vanilla extract {I used vanilla}
-food coloring
Process:
1. Stir together all frosting ingredients {if its too thick you can a little more corn syrup}.
2. Divide the frosting mixture into as many small bowls as colors you want to mix.
3. Mix in food coloring and frost cookies as desired.
4. Allow frosting to dry {I placed my freshly frosted cookies on a large sheet of freezer paper to set; it really reduces the amount of clean-up you have to do}.
5. Enjoy!
