Hot Cheddar & Mushroom Dip

This was really good; although I think next time I will use fresh mushrooms and just saute them before adding them to the other ingredients!  

This is also very easy to through together; I found the recipe from Taste of Home.  Enjoy!

Ingredients:
-2 cups mayo or Miracle Whip {we like Miracle Whip better}
-2 cups (8 oz.) shredded cheddar
-2/3 cup grated Parmesan
-4 cans (4 1/2 oz. each) sliced mushrooms, drained OR 16-24 ounces fresh sliced mushrooms, sauteed until just tender {I'll do this next time!}
-1 envelope ranch dressing mix OR 3 tbsp Homemade Ranch Dressing Mix
-about 1/4 to 1/2 cup minced fresh parsley
-1/4 to 1/2 cup chopped onion {the original recipe doesn't call for this but I think it would be a nice addition to the recipe!}
-assorted crackers for serving

Process:
1. Combine and mix all ingredients directly in crock-pot.
2. Cook covered over high heat for 2-3 hours or on low for 4-6 hours, stirring occasionally.
3. Serve with an assortment of crackers.
4. Enjoy!
