Peach Puff with Strawberry Salsa

This was really great; the crust is kind of like a firm custard!

You don't have to do the Strawberry Salsa; instead you could serve this with warmed peach preserves {or whatever kind of preserves  you like} or real maple syrup.  Yum!

I'm not sure where I got this recipe, but its a good twist on a normal fruit dessert!

Ingredients for Peach Puff:
-6 tbsp butter
-6 eggs
-1 cup flour
-1/2 cup sugar
-1/8 tsp salt
-1 cup milk
-1 tbsp vanilla or almond extract
-1 lb. (about 3 large) fresh peaches, peeled and sliced to 1/4 inch thickness {or if its not peach season use 1 lb frozen peaches, thawed}
Ingredients for Strawberry Salsa: {Makes about 2 cups; if you have leftovers, its great over grilled chicken, beef or salmon.  You could also add some chopped jalapeno and shallot for some zing!}
-1/4 cup orange juice
-juice of 1 lime
-2 tsp brown sugar
-1 tbsp finely chopped mint or parsley, optional
-3/4 to 1 lb. fresh ripe strawberries, diced
-1/4 cup fresh peach or mango, diced
Process:
1. Preheat oven to 375 degrees.
2. In a large bowl, beat eggs; whisk in flour, sugar, salt, milk and extract.
3. Beat until smooth, set aside.
4. Lightly spray a 9 x 13 inch baking dish with cooking spray.
5. Place butter in baking dish and melt in oven.
6. Stir peaches into butter; return to oven and cook 2 to 3 minutes {if you're using frozen peaches cook for 4 to 6 minutes}.
7. Remove peaches from oven and pour batter over peaches.
8. Return to oven and bake 20-25 minutes until puffed and golden.
9. Serve immediately with Strawberry Salsa, warmed peach preserves or real maple syrup.
10. Enjoy!
