Easy Fruit Tart

This is a really good and no-fuss fruit tart; you can use any fruit you want or have on hand!  Enjoy!

I found the original recipe from AllRecipes.
Ingredients for Crust:
-2 cups flour {you could use half wheat flour if you like}
-1/2 tsp salt
-1 cup shortening
-1/2 cup cold water

Ingredients for Topping:
-3 tbsp sugar
-2 tbsp cornstarch
-2 cups fresh peaches, sliced {I used 2 peaches}
-1 cup fresh blackberries {I didn't use these this time}

I also used:
-1 1/2 cups quartered strawberries
-1/2 cup blueberries
-1 sliced kiwi
Process:
1. Preheat oven to 450 degrees.
2. Stir together flour and salt; add shortening blend in shortening by rubbing with your fingers until the mixture becomes the consistency of oatmeal.
3. Gradually add enough water until dough just holds together.
4. Place dough in refrigerator while prepping the fruit.
5. Toss all fruit together, sprinkle with sugar and cornstarch; toss to coat.  Set aside.
6. Roll crust into a rough circle 10-12 inches across.  Place it on a flat baking sheet or in a large, 10-12 inch spring-form pan.
7. Pile fruit {discard any juices in the bottom of the bowl} in the center of the crust, spread fruit to within 1-2 inches from the edges.
8. If doing on a flat baking sheet fold dough over the edges of the fruit.
9. Bake 30-35 minutes, until fruit is bubbly and crust is golden.
10. Let cool completely before cutting into wedges.
11. Enjoy!
