Pizza Soup is a quick and easy wonderful cool weather soup! Serve it with bread sticks or croutons (maybe cornbread croutons). Yum!
You can change the ingredients to fit your family's tastes.
I found the original recipe here.
Ingredients:
-2 1/2 cups pizza or spaghetti sauce
-5 1/2 cups water
-1 green pepper, seeded and chopped
-1/2 red onion, chopped
-1 cup mushrooms, sliced
-1 cup tomatoes, chopped or 1 can diced tomatoes, drained
-2 cooked Italian sausages, sliced or roughly chopped
-1 cup sliced pepperoni, cut into quarters
-about 1/4 cup chopped fresh basil leaves or 1/2 tbsp dried
-1 tbsp dried oregano
Add later...
-1/2 to 1/3 cup dried pasta (use 1/3 cup if using really small pasta and 1/2 cup if using larger pasta)
-shredded mozzarella or other cheese
Process:
1. Put all ingredients in the crock-pot except pasta and cheese.
2. Cover and cook on low for 7 to 9 hours or on high for 4 to 5 hours.
3. Twenty to thirty minutes before serving add dry pasta, stir and turn to high (if not already on high).
4. Check pasta to see if its cooked the way you like it {we like ours a little more firm, al dente}.
5. Garnish with shredded cheese to serve.
6. Enjoy!
