Steak Gyros

These are super duper delicious!  I used my Homemade Pita recipe and prepped the meat, vegetables and sauce the morning of; I'm sure you could prep all of the things of the weekend and let them marinate to make an awesome, quick  weeknight meal!

I found the original recipe in my July/August 2011 Food Network Magazine; this recipes a keeper!

Ingredients:
-1/3 cup olive oil
-3 cloves garlic, minced
-1 tsp dried mint, optional {I skipped the mint}
-1 tsp dried oregano
-1/2 tsp paprika
-salt and pepper to taste
-1/2 cup Greek yogurt {I used my Homemade Greek yogurt}
-1 green bell pepper, seeded and sliced
-1 onion, sliced
-1 lb steak, trimmed of bone and excess fat
-tomato, chopped {optional}
-1 bunch watercress, roughly chopped {optional}
* Cucumber would be fantastic on these too!

Process:
1. To make marinade, whisk together olive oil, garlic, mint (if using), oregano, paprika, 1 tsp salt and pepper to taste.
2. Whisk 1 tbsp marinade into the Greek yogurt. {The original recipe says to mix in 2 tbsp water too; I like a thicker sauce so I skipped it.}
3. Place pepper and onion in an airtight container and toss with a little bit of the marinade, just enough to coat.  Cover and store in refrigerator until ready to use.
4. Place meat in an airtight container and toss with remaining marinade.  Cover and refrigerate at least 4-6 hours or until ready to use.  {The longer you marinate the meat the more the flavors with penetrate.}
5. When ready, use a grill pan or other large pan to cook meat and vegetables over medium-high heat.  {You could grill the meat and vegetables if you like; if your worried that the pieces are too small just skewer them for grilling or use a grill pan.}
6. Cook to your desired doneness, let meat rest 5-10 minutes and thinly slice.
7. Serve meat, peppers and onions in pitas with the Greek yogurt sauce and enjoy!
