Crock-pot Apple Crisp

This is a really good apple crisp recipe, minus the crust topping.  

I doubled the recipe and probably should have only used a single or half batch of the crumb topping; it stayed too soft and mushy.

The apples were perfect and tasted fantastic; next time I'll use a single or half batch of the crumb topping!  I've listed the ingredients the way I'll make this next time.  Enjoy!

Apple Base Ingredients {for a double batch}:
-2/3 cup sugar
-2 tbsp cornstarch
-1 tsp ground ginger
-1 tsp ground cinnamon
-12 cups apples, peeled, cored and chopped in 1-2 inch cubes {about 13-14 apples, I used both Granny Smith and Gala apples}
-1/4 cup lemon juice

Topping Ingredients {for a single batch, I doubled the batch in the pictures}:
-1 cup flour
-1/2 cup brown sugar
-1/2 cup sugar
-1/2 tsp ground cinnamon
-1/4 tsp ground nutmeg
-1 pinch salt, about 1/8 tsp
-1/2 cup butter, softened
-generous handful of oatmeal, optional
-1 cup chopped walnuts or other nuts, optional

Process:
1. Place cubed apples in crock-pot.
2. Drizzle lemon juice over apples.
3. Top apples with sugar, cornstarch, ginger and cinnamon.
4. Toss well to coat all apple pieces, set aside.
5. For topping, combine sugar, brown sugar, cinnamon, nutmeg and salt.
6. Add flour.
7. Whisk to combine thoroughly.
8. Add softened butter to flour mixture.
9. Push with whisk to combine ingredients, you can also combine with your hands if its easier.
10. Add the oatmeal and nuts, if using.
11. Combine until this becomes a crumbly mixture.
12. Top apples evenly with crumb topping.
13. Cover crock-pot {you can let this sit at room temp or in the refrigerator until your ready to make it}; cook on high for 2 hours or on low for 4 hours, until apples are tender.
14. Remove the crock-pot cover and continue to cook for about 1 hour to allow topping to become crispy.
15. Enjoy with vanilla ice cream or fresh whipped cream!

  1. This is delicious, I made it tonight and am eating it now, it's such a simple recipe and it was really quick for a crock pot! I will definitely be making this again!
