Popcorn Salad

Popcorn Salad is really tasty; odd, but tasty!  And fun!

The original recipe is from BakeSpace; I omit the 2 cups finely chopped water chestnuts, because my family doesn't like them.

Ingredients for the Dressing:
-2 cup mayo {I use Miracle Whip}
-2/3 cup sugar
-1 tsp white vinegar

Ingredients for the Salad:
-2 cups finely chopped celery
-1/2 lb. bacon, crispy fried and crumbled {or a bag of real bacon pieces}
-1 bag (9 oz.) regular white popcorn {or 3 bags microwave popcorn, popped; if you pop your own make sure you remove all of the kernels that didn't pop}
-1/2 cup finely chopped onion
-1 1/2 cup shredded cheddar cheese

Process:
1. Whisk together the dressing ingredients.  {You can do this a day in advance if you like.}
2. I like to mix the onion into the dressing so the flavors start to mix.
3. Mix the celery into the dressing mixture.
4. Now your salad is ready to assemble.
Put the popcorn in a large bowl, add the shredded cheese.
5. Add the bacon.
6. Top with the dressing mixture.
7. Stir well to coat all of the popcorn and distribute all of the other ingredients.
 8. Serve immediately, enjoy!
If you have any leftovers the popcorn will be "soggy", but it is still very tasty.
