Double Lemon Bars


These lemon bars are great!  The have fantastic lemon flavor and are very easy to make.

Just make sure you zest your lemons before you juice them! :D

Ingredients:
-1 1/2 cups flour
-1/2 cup powdered sugar
-3/4 cup butter, softened/melted
-4 eggs
-1 1/2 cups sugar
-1/2 cup fresh lemon juice {juice from 3 lemons}
-1 tbsp flour
-1 tsp flour
-1 tbsp lemon zest {from 1-2 lemons}
-powdered sugar for dusting

Process:
1. Preheat oven to 350 degrees.
2. Combine 1 1/2 cups flour and 1/2 cup powdered sugar.
3. Add butter.
I don't always plan ahead so I often
just "soften" the butter in the microwave.
4. Combine flour mixture and butter until it becomes a course dough consistency.
5. Press the dough into the bottom of a 9 x 13 inch baking dish.
6. Bake until golden, about 20 minutes.  {When you remove the crust from the oven leave the oven on at 350 degrees.}

After baking, you can see the
golden color around the edges.
7. Meanwhile, in the same bowl beat eggs, 1 1/2 cups sugar, and 1 tbsp plus 1 tsp flour.
8. Add lemon zest.
9. Add lemon juice.
10. Blend until thoroughly combined.
11. Pour the lemon mixture directly over the hot crust.
You can see how the eggs instantly
start to cook around the outside edge of the pan.
12. Return to oven and bake until the lemon mixture is set, about 20 minutes.
13. Cool completely and dust with powdered sugar before serving.
14. Enjoy!
