Ultimate Twice Baked Potatoes

One word... "AWESOME". 

These are great twice baked potatoes and could be prepped the day before it you wanted; prepare until ready to bake and refrigerate until ready to use.

Ingredients:
-4 large baking potatoes (cleaned and poked with knife)
-8 bacon slices, cooked and crumbled OR real bacon pieces/bits {I like to keep it easy!}
-1 cup sour cream
-1 tbsp butter, melted {optional: I don't think its needed in this recipe.}
-1/2 tsp salt
-1/2 tsp pepper
-1 cup shredded cheddar or other cheese, divided
-8 green onions, sliced and divided

Process:
1. Preheat oven to 350 degrees.
2. Bake potatoes for about 1 hour (OR microwave to cook faster; cook time will depend on your microwave) until cooked through {you could do this in advance too}.
3. Cool potatoes for at least 10 minutes.
4. Slice potatoes in half lengthwise.
5. Scoop out insides of potatoes into a large bowl.
6. Add sour cream, milk, butter (if using), salt, pepper, bacon, 1/2 cup cheese and 1/2 of the green onions to potato insides.
7. Mix well with mixer or masher until completely combined.
8. Spoon mixture into potato skins.
9. Top with the remaining cheese and green onions. {You could refrigerate for the next day at this point.}
10. Bake for 15 minutes {longer if you made them the day before, probably about 25-30 minutes}.
11. Remove from oven and enjoy!
