These are great! They take some time in the oven, but they are so easy!
Ingredients:
-1/4 cup canola oil
-1/2 cup butter, melted
-2 tbsp lemon juice (preferably fresh)
-3 garlic cloves, minced
-1 tbsp dried dill weed
-1 tsp salt
-1 tsp pepper
-8 to 10 large potatoes, cubed {you decide if you want to peel them or not}
Process:
1. Preheat oven to 400 degrees.
2. In a large bowl stir together oil, butter, lemon juice, garlic, dill, salt and pepper.
3. Add potatoes and toss well to coat.
4. Spread potatoes on a large baking sheet; drizzle with any remaining liquid from bowl. {I like to use parchment paper for this then they don't stick.}
5. Bake potatoes for about 1 hour or until softened.
6. If they don't brown as much as you want you can turn on the broiler for the last 2-4 minutes, but make sure you watch them to ensure they don't burn.
